The Dedy Praline Cutter

is perfectly suited for cutting praline substance, fat substance, butter, gianduja, marzipan, fondant caramel, ganache, jelly substance, petit fours, cut pralines and similar products into precise squares, rectangles and rhombi. The praline substance slab of 360 x 360 mm is the result of rolling the material out between rails or filling mould frames or mould plates which we produce in accordance with your specifications.



Pralines are cut as follows:


The either rolled-out, poured-out and evenly distributed substance is applied to the base of the cutter. The first cut is made by using the corresponding frame cutter. A thin sheet of stainless steel which is part of the set is pushed under the cut substance from behind and the strips are lifted off.


The frame cutter is opened, and the strips are turned 90° before being cut a second time - the result is a square shape. To get a rhombi-like shape, the strips are placed transversely. If the goal is a rectangle, different frame cutters are used for the second cut. The base is made out of anodized aluminium; all other parts are made of stainless steel.
